I am preparing for my Father and Grandmother's birthdays which we will celebrate in August while in France. I want to make them something special and beautiful, customizable in terms of flavor and adornments. These Victorian cakes would do the trick I think, which their irregular shapes, dripping jams and summery berries. I made one yesterday as a trial run to bring to a pool party. It was easy and delicious, but quite hard to slice, unless you don't mind a little mess on your plate!
For the cake layers I used this video from Great Britain, omitting the tea, doubling the recipe and using 9" pans. The fillings were Bonne Maman Wild Blueberry Jam and barely sweet whipped cream with berries.
Very lovely. It looks delicious as well!

That is one gorgeous practice cake, and also your photographs are so rich and detailed. Like I could reach out and swipe a fingerful of frosting.
